This simple but winning combination of chocolate and pears delivers a cake which is great for any moment of the day- dress it up with icing sugar, pair it with vanilla ice cream or just enjoy as is!
Just a suggestion- don’t be shy on the amount of pear as it will shrink substantially and the cake with leaven so you don’t want the pears to get lost in it!
INGREDIENTS
140 g sugar
2 eggs
150 g butter
150 g flour
100 dark chocolate
2 tablespoons unsweetened cocoa powder
2 pears bosch or bartlett
50 g milk (+ 1 teaspoon to melt chocolate)
1 baking powder bag
Pinch of salt
INSTRUCTIONS
Beat the eggs with sugar and a pinch of salt, until they become light and fluffy.
Melt the dark chocolate and cocoa powder in a bain-marie , then mix in the butter and then the milk.
When chocolate mixture is cool, add the flour and baking powder and stir till you have a consistent dough.
Lastly, gently fold the chocolate dough into the egg mixture in a few batches.
Pour the dough into a cake mold of 22 cm in diameter, previously buttered and floured.
Peel the pears and cut them into wedges. Slice them into thin slices and with these decorate the surface of the cake in the mold, arranging them radially.
Bake 40 min (check with toothpick) at 350 degrees F.
